Simple Chilled Chocolate Oreo Cheesecake Cupcakes

Sometime when you're feeling a little lazy and you just don't feel like going through the trouble of sticking a cake in to the oven to bake, then these little cupcakes are a great treat...!

I made the previous ones about 2 years back, only at that time i crushed the Oreo cookies for the base and topped them with pieces of dark chocolate...

So it was my sister's birthday and i decided to make these simple cupcakes, since she liked them so much the last time i did them... I always use Oreo cookies as the base because it seems to be, not only easier, but most people seem to like Oreo cookies more...

Simple Chilled Oreo Cheesecake Cupcakes

This time i left the Oreo cookies whole for the base... This recipe makes exactly 12 cupcakes...
I used regular Oreo cookies for half the batch and chocolate ones for the rest... I attached the full recipe below...

Use hard muffin cups instead of the paper ones
Firstly, i place the Oreo cookies at the base of each cup...

6 regular Oreos and 6 chocolate ones

After preparing the chocolate cheese batter, i used an ice cream scooper to spoon the mixture evenly into each cup... and i left it to chill overnight, though up to 2 hours is good enough..



I wanted to use whipped cream on top, but then it didn't work out and i had to improvise a little... I decorated my sister's cupcakes with mini Oreos and mini chocolate chip cookies (6 with mini Oreos and the other 6 with the mini chocolate chip cookies).. ^_^ Then scattered crushed Oreo cookies around the top... Sorry they may not look so nice.. :-"


This simple treat makes not only a great gift, since all cupcakes look really pretty in boxes..^_^, but also just as a party dessert..


The Recipe...
Simple Chilled Chocolate Oreo Cheesecake Cupcakes

For the base:
Crush 8-9 or leave whole Oreo cookies for the base of the cupcake.

For the Chocolate Cheese top: Makes 12
25g butter
200g cream cheese
1 egg, lightly beaten
2 Tbsp brown sugar
75g good quality plain chocolate, melted and slightly cooled

Beat all the ingredients together until mixture is smooth and thick. Spoon evenly into each cup over the Oreo cookies.

Refrigerate for 2-3 hours before decorating them with whipped cream or with any sort of treats and candies to your liking.

Eat with a spoon straight from the cup... ^_^
